The classic dishes of Bella Italia in a creative way

3/4-hour course with 4/5 course menu with pantry recipes and meal served with the prepared dishes.

In this Private Class we will address various topics, the aspects of which will be related to the use of different types of cuts: meat, vegetables and fish like a real Sushi Chef.
We will approach the roasting and creaming of a risotto and cooking techniques such as steam, vacuum, drying or CBT .
(low temperature cooking)

This is the menu that I propose to you:

  • Steamed squid stuffed with sheep’s ricotta with green asparagus and crispy leek
  • Favignana tuna sautéed with black pepper from Jamaica and wild fennel pesto with cucumber and bottarga gazpacho
  • Risotto “Vialone Nano Veronese” whisked with courgette flowers and scampi with squid and marjoram

  • Carasau bread lasagna with lamb stew, Sardinian pecorino cheese and potato and leek soup
  • Steamed sea bass fillet with couscous pie, vegetable brunoise and prawn with mint and Pachino cherry tomatoes
  • Crunchy pineapple millefeuille with rice milk mousse and strawberry foam
